Trevelez Gastronomy

The history of Trevelez ham goes back to 1862, when Queen Isabel 2nd awarded the town hall with the privilege of stamping her royal stamp on the locally produced cured ham. Since then, generations of families have passed the ham curing tradition for almost 200 years, as well as the knowledge and process techniques for salting and curing hams.
